Saskia Beer and Novotel Barossa Valley Resort Announce Restaurant Collaboration
- Written by Ginni Post
Novotel Barossa Valley Resort is pleased to announce that it will be teaming up with local artisan food producer, cook and food educator, Saskia Beer to form a unique food partnership.
Saskia Beer will bring her 25 years' experience as a chef and food producer to assist Novotel Barossa Valley Resort in the transformation and redesign of the hotel's restaurant and food & beverage offering. Saskia's vision is to make Barossa ingredients and local producers the “food heroes” and Novotel a real foodie destination and the place for every visitor and local to experience the region's rich food heritage.
Novotel Barossa Valley Resort is set to embark on an extensive refurbishment that will include a complete redesign of the restaurant, adding a signature Gourmet Bar to create a sophisticated look and feel. The restaurant name will also change in line with the new concept, heralding the end of an era for Harrys Bar & Restaurant.
Saskia Beer Farm Produce will procure local provedores, growers and animal producers to establish produce partnerships and create exclusive Novotel branded products for the new menus. Through Saskia, Novotel will have a true paddock to plate philosophy as animals will be cultivated and supplied by Saskia Beer Farm Produce as base products such as ham, bacon, sausages and charcuterie as well as make stocks, glazes and speciality pies.
Saskia will lend her expertise in the kitchen to train Novotel chefs how to make special sauces, prepare vegetable and salad accompaniments, down to the final preparation of meats. Each dish will have a specific recipe and is expected to meet Saskia's standard of excellence.
Novotel Barossa Valley Resort will also become one of the 'paddocks' and grow specialised vegetables, alongside Chef and the kitchen team foraging the local area for ingredients to enhance and incorporate into dishes.
As part of the partnership, Saskia Beer and Novotel will provide exclusive food experiences including farm tours with cooking demonstrations, foraging and skill based classes for hotel guests and conference groups.
Of her collaboration with Novotel Barossa Valley Resort, Saskia Beer, said “It is so exciting that Novotel Barossa Valley Resort is going to prioritise its restaurant makeover and take full advantage of the unique food culture of the Barossa Valley.
“I'm delighted to be working with Novotel Barossa to help transform their hotel as a real foodie destination, a centre for learning, a generator of unique events, and a chance to build lasting links within the Barossa community. All my dishes will be produce driven not chef driven with ingredients as the hero. For me it's really important to pass on our Barossa food heritage to visitors, which in turn helps us to maintain and build that heritage for the next generations,” said Saskia.
General Manager of Novotel Barossa Valley Resort, Sarah Henderson, said “To be working with one of the Barossa region's finest food specialists is a real coup for us. We're really excited to have the Saskia's expertise from both the farm gate and in the kitchen to bring a true sense of authenticity and locality to the hotel restaurant experience.
“The Barossa Valley has a reputation for its world-class food and wine experiences and it is our intention to create an inviting new restaurant space and food philosophy in partnership with Saskia Beer, so our guests can “Be Consumed” and taste the very best that the Barossa has to offer,” said Sarah.
Saskia Beer and Novotel Barossa Valley Resort will spend the next few months collaborating with local producers, creating new menus and training staff. The Restaurant will also undergo a major design change and new name set to be unveiled in May 2016.
